🍮 Old-Fashioned Baked Rice Pudding Recipe
Ingredients:
- 1 cup cooked rice (white or jasmine works best)
- 2 cups whole milk
- 1 cup heavy cream
- 3 large eggs
- ¾ cup sugar
- 1 tsp vanilla extract
- ¼ tsp salt
- 2 tbsp melted butter
- A pinch of nutmeg (optional)
- ¼ cup shredded coconut (optional for texture)
Instructions:
- Preheat oven to 350°F (175°C). Grease a small baking dish (like the one in your photo).
- Mix wet ingredients — In a large bowl, whisk together the eggs, milk, cream, sugar, vanilla, salt, and melted butter until smooth.
- Add the rice — Stir in the cooked rice (and coconut if using). Make sure the rice is evenly spread and fully coated with the mixture.
- Bake — Pour everything into your greased baking dish. Sprinkle lightly with nutmeg on top for flavor.
- Water bath (optional but best): Place the baking dish inside a larger pan filled halfway with hot water — this helps the pudding bake evenly and stay creamy.
- Bake for 45–55 minutes, until the top is golden brown and a knife inserted in the center comes out mostly clean but still slightly moist.
- Cool slightly before serving — it thickens as it cools.
Serving tip:
Serve warm or chilled with a drizzle of honey, condensed milk, or a sprinkle of cinnamon.
